Zum Moghulhof offers the cuisine of the Mughals, a Turkish ruling family from Central Asia who were deeply influenced by Persian culture, responsible for much of the Indian food known worldwide. This cuisine developed from the 16th century onwards, during the Mughal’s reign, which was cantered in Delhi. They introduced new foods, spices and preparation techniques, such as cooking with the tandoor oven, which they brought from their own culture and also learned from the Persians. Mughal cuisine is renowned for its delicious meat dishes and rice polaus, which often contain mild and creamy sauces made with yoghurt, cream, fruit and nut butter. The secret to the unique flavours of Indian cuisine is the composition of spices, which do not include the curry powder commonly known in Europe. Over time, local herbs and spices also made their way into Mughal cuisine, eventually becoming the national cuisine of northern India, known as Mughlai cuisine.
